this delicious cinnamon french toast will spice up your MNDAY morning & energize you for the rest of the week.
(serves 4 & takes 25 minutes)
ingredients
2 eggs
1 cup almond milk
2 tbsp sugar
2 tsp ground cinnamon
⅛ tsp nutmeg
½ tsp vanilla extract
8 slices of brioche, cut ½-inch thick
1 tbsp unsalted butter
4 oz fresh blueberries
4 oz walnuts
pure maple syrup, to taste
Procedure
1. in a medium bowl, whisk eggs, milk, sugar, cinnamon, nutmeg, & vanilla extract until all ingredients are combined.
2. take a slice of brioche & soak it in the milk mixture, allowing both sides of the brioche to absorb as much of the mixture as possible. repeat with each of the remaining brioche slices.
3. on medium heat, melt butter on a pan to prevent the french toast from sticking. (to minimize the time, one can work with a few pans at a time.)
4. place slices of the soaked brioche on the pan & let the soaked brioche sit for 3 minutes on each side, until golden. remove french toast from flame.
6. cut each french toast diagonally to form triangles & top with fresh blueberries & walnuts. drizzle with pure maple syrup.
