the earthy feel of these cinnamon & cardamom tea cakes will make your Monday morning bright!

(makes 12 & takes 35 minutes)
ingredients
2 cups all-purpose flour
1¼ cup sugar
2½ tsp baking powder
½ tsp baking soda
1¼ tsp ground cardamom
1 tsp + a pinch of kosher salt
1 large egg
1 cup whole milk
14 tbsp unsalted butter, melted
1 tsp ground cinnamon
procedure
1. preheat oven to 350°F. spray 12-cup muffin pan with nonstick cooking spray. in a large bowl, whisk flour, ¾ cup sugar, baking powder, baking soda, 1 tsp cardamom, & 1 tsp salt. in a medium bowl, whisk egg, milk, & 10 tbsp butter. add wet ingredients to dry ingredients.
2. pour batter in muffin pan & bake for 25 minutes. in a small bowl, whisk ½ cup sugar, cinnamon, ¼ tsp cardamom, & a pinch of salt. dip tops of cakes in melted butter. sprinkle cinnamon sugar on top.
