these hearty chilaquiles will energize and prepare you for a productive Monday morning!
(serves 8 & takes 40 mins)
ingredients
10 corn tortillas
10 ripe medium tomatoes
½ bunch cilantro
2 small onions
1 garlic clove
canola oil, for frying
1 small chile serrano
salt & pepper, to taste
sour cream, for serving
añejo cheese, for serving
shredded chicken, optional
procedure
1. in a medium pan over medium-high heat, fry tortilla wedges in oil. once slightly browned & crispy, place on paper towels to remove excess oil. place tortillas in a serving dish.
2. in a large pot, combine tomatoes, cilantro, 1 onion, garlic clove, chile serrano, salt, & pepper. add water to just cover all ingredients. bring mixture to a boil. let cool slightly. blend until smooth.
3. in a medium saucepan over medium heat, fry 1 onion in oil until fragrant. add tomato sauce & stir 5 minutes.
4. right before serving, pour tomato sauce over fried tortillas & top with cream & cheese (& chicken, if using).
