chickpea rice cinnamon pudding

breakfast is the meal in which we need to get all the energy necessary to be the most productive during our day & chickpeas have just these energizing nutrients. using chickpea rice, I made a cinnamon rice pudding, & it will vitalize you this MNDAY morning!

(serves 4 & takes 35 minutes)


3 cups chickpea rice, cooked (the best is!)

3 cups of your favorite milk

⅔ cup sugar

2 tbsp butter

½ cup raisins

1 tsp vanilla extract

1 tbsp lime zest

1 tsp cinnamon


1. in a medium saucepan, mix together cooked rice, milk, sugar, butter, raisins, & vanilla.

2. cook for 25 minutes, stirring occasionally, until most of the liquid is absorbed.

3. remove from heat & mix in lime zest & ½ tsp of cinnamon. divide pudding into 4 bowls, dust with remaining cinnamon, & serve.
