cheese stuffed tomatoes

as we stay home social distancing, I have been reading several articles (a great one), books, & of course, cooking. this morning, you can prepare this delicious & easy breakfast recipe & enjoy it with your family!

(serves 4 & takes 35 minutes)


4 large vine-tomatoes

pepper & salt, to taste

1 cup ricotta cheese

2 tsp parmesan cheese, grated

2 tbsp arugula, chopped

1 tbsp chives, chopped

2 tsp breadcrumbs

extra-virgin olive oil, for drizzling


1. preheat oven to 350°F. cut each tomato in half, and scoop out the inside. season the inside with salt & pepper. place the tomatoes on a baking sheet lined with parchment paper.

2. in a bowl, mix together the ricotta & parmesan cheeses, arugula, & chives.

3. stuff the tomatoes with the cheese mixture. top with a sprinkle of breadcrumbs & a drizzle of olive oil. place tomatoes in the oven until tomatoes are soft, about 25 minutes.

4. place 2 tomato-halves on each plate & serve warm.
