carrot cake muffins with cream cheese glaze

I have had my fair share of delicious carrot cakes, but these carrot cake muffins surpassed them all with their creamy & smooth cream cheese glaze; something to enjoy this morning!

(makes 16 & takes 30 minutes)


1½ cups all-purpose flour

1 tsp baking soda

tsp cinnamon

¼ tsp nutmeg

¼ tsp salt

3 medium carrots, finely grated

½ cup maple syrup

1 tbsp olive oil

cup applesauce

1 egg

1½ tsp vanilla extract

½ cup almond milk

4 oz cream cheese

¼ cup powdered sugar


1. preheat oven to 350°F. spray muffin pan with nonstick cooking spray.

2. in a medium bowl, combine flour, baking soda, cinnamon, nutmeg & salt.

3. in a large bowl, whisk carrots, maple syrup, olive oil, applesauce, egg, 1 tsp vanilla, & almond milk. stir in flour mixture. 

4. pour batter into muffin cups. bake for 18 minutes. meanwhile, warm cream cheese in microwave for 30 seconds & mix in powdered sugar & vanilla. once muffins are cool, glaze muffins with cream cheese mixture.
