caramelized banana cake

enjoy something sweet to begin the week on a happier note. let's continue to work together & hopefully to get through this time healthy & well.

(serves 6 & takes 45 minutes)

ingredients

12 tbsp unsalted butter cup granulated sugar 1 vanilla bean, split lengthwise & seeds scraped 3 large bananas

1½ cups all-purpose flour 1½ tsp baking powder ¾ tsp salt ½ teaspoon ground cinnamon 2 large eggs ½ cup whole milk 1 tsp vanilla extract

procedure

1. to make the topping, heat 4 tbsp butter, ½ cup sugar, & vanilla seeds in a cast iron skillet. stir until butter & sugar are liquified. peel bananas & slice them in four lengthwise, & arrange them over butter mixture in skillet.

2. preheat the oven to 350ºF. in a bowl, combine flour, baking powder, salt, & cinnamon.

3. in another bowl, beat the remaining 8 tbsp butter & ¾ cup sugar. add eggs one at a time. mix in half the dry ingredients, then milk & vanilla extract, & then the remaining dry ingredients.

4. place batter on top of bananas in skillet & bake for 30 minutes. let cool & flip cake from pan to a serving plate.
