breakfast blondies

who says we can't have blondies for breakfast? these are sprinkled with enriching walnuts & will energize you this Sunday morn!

(serves 4 & takes 45 minutes)

ingredients

4 tbsp unsalted butter + more for greasing

1 cup walnuts, chopped

¾ cup unsweetened almond butter

½ cup pure maple syrup

2 tbsp flaxseed meal

1 tsp kosher salt

½ tsp baking powder

3 large eggs

procedure

1. preheat oven to 350°F. grease a pan with butter.

2. in a medium pan, over medium heat melt butter. cook walnuts, stirring continuously, 5 minutes. strain brown butter & set nuts aside. combine brown butter, almond butter, maple syrup, flaxseed, salt, & baking powder. add eggs one at a time & whisk for 1 minute. stir in all but 2 tbsp of the walnuts.

3. pour batter into the greased pan & top with remaining nuts. bake blondies for 20 minutes, until lightly browned. cut into squares & serve.
