an omelette is a staple dish that is singularly scrumptious with its soft & creamy egg outside & surprise inside of boursin cheese. the recipe makes 1 omelette, but I think you'll love it so much, you'll be making five!

(makes 1 omelette & takes 20 minutes)
ingredients
2 eggs
2 tbsp unsalted butter + more for serving
coarse sea salt & freshly ground pepper
1 oz Boursin cheese
1 tbsp finely chopped chives
procedure
1. in a bowl, whisk eggs very well. in a nonstick skillet over medium heat, melt 1 tbsp butter. once butter begins to foam, add whisked eggs & season with salt & pepper.
2. stir eggs quickly & constantly in a figure 8 shape while moving skillet in a circular motion until eggs are nearly cooked through on bottom & runny on top. remove from heat & let sit 1 minute.
3. spoon dollops of cheese across center of omelette. using a spatula, roll up omelette until halfway through. add 1 tbsp of butter, & continue rolling up. turn onto a plate (seam down) & rub butter on top of omelette. sprinkle with salt & chives.
