black bean & greens frittata

this hearty breakfast black bean & greens frittata pumped me up for the day. did you know people have been enjoying black beans for over 7,000 years, when they were a staple ingredient in South & Central America?!

(serves 6 & takes 40 minutes)


12 large eggs

1½ cups parsley, chopped

¾ cup sour cream

kosher salt

4 tbsp extra-virgin olive oil

31 oz black beans (my favorite are A Dozen Cousins!)

1 medium onion, finely chopped

⅔ cup mayonnaise

1 garlic clove, grated


1. preheat oven to 350°F. in a medium bowl, whisk eggs, parsley, sour cream, & 1 tsp salt. in a medium ovenproof skillet over medium-high, heat 2 tbsp oil. add beans & season with salt. cook 6 minutes. reduce heat to medium, add onion & remaining 2 tbsp oil, & cook 7 minutes longer.

2. reduce heat to medium-low, & pour in the egg mixture. cook, stirring often, 6 minutes. transfer to oven & bake around 12 minutes.

3. meanwhile, in a small bowl, mix mayonnaise & grated garlic clove. season with salt. serve the frittata with garlic mayo.
