this hearty breakfast black bean & greens frittata pumped me up for the day. did you know people have been enjoying black beans for over 7,000 years, when they were a staple ingredient in South & Central America?!

ingredients
12 large eggs
1½ cups parsley, chopped
¾ cup sour cream
kosher salt
4 tbsp extra-virgin olive oil
31 oz black beans (my favorite are A Dozen Cousins!)
1 medium onion, finely chopped
⅔ cup mayonnaise
1 garlic clove, grated
