(serves 4 & takes 1 hour + overnight chilling)
2½ cups Greek yogurt
1 cup sugar
1¼ cups mashed overripe bananas
2 tbsp unsalted butter, melted
¼ tsp vanilla extract
1½ cups all-purpose flour
¼ tsp kosher salt
¾ tsp baking powder
¾ tsp baking soda
1½ tsp ground cinnamon
¼ tsp ground nutmeg
1 tsp cinnamon
1. place a fine mesh strainer over a bowl. place 4 layers of cheesecloth on top of the strainer. scoop 2 cups of yogurt onto cheesecloth & fold cheesecloth over on top. cover with plastic wrap & store in refrigerator overnight.
2. remove labneh from cheesecloth. in a mixing bowl, fold cinnamon into labneh.
3. preheat oven to 350°F. coat a loaf pan with nonstick spray. 4. in a large mixing bowl, whisk eggs & sugar. mix in the remaining ½ cup yogurt, bananas, butter, & vanilla. 5. in a separate bowl, combine flour, salt, baking powder, baking soda, cinnamon, & nutmeg. mix dry ingredients into wet. pour batter into loaf pan & bake for 45 minutes. serve each slice of banana bread with cinnamon labneh.
