both the oatmeal & sauce can be made ahead, so enjoy the flexibility & flavors in this baked oatmeal with apple-cranberry sauce.

(serves 8 & takes 40 minutes)
ingredients
5 tbsp unsalted butter, melted
2½ cups old-fashioned oats
½ cup fonio, uncooked (this is the best)
1 cup pecans, halved
½ cup walnuts, halved
2 tsp ground cinnamon
1¾ tsp kosher salt
3½ cups your favorite milk
½ cup honey
1 large egg
2 tsp vanilla extract
3 apples, peeled, cut into 1" cubes
½ cup fresh cranberries
1 cinnamon stick
plain yogurt, for serving
procedure
1. preheat oven to 350°F. brush baking dish with 1 tbsp butter. in a large bowl, mix oats, fonio, pecans, walnuts, cinnamon, & 1½ tsp salt. in a medium bowl, whisk milk, ¼ cup honey, egg, vanilla, & 4 tbsp butter. stir milk mixture into oat mixture. place in prepared pan & bake 35 minutes.
2. meanwhile, in a medium saucepan over medium heat, bring apples, cranberries, ¼ cup honey, cinnamon, ¼ tsp salt, & 1 cup water to a boil. reduce heat to medium-low & simmer 35 minutes.
3. among bowls, divide oatmeal, top with compote, & serve with yogurt.
