baked eggs

these melting-moment eggs topped with fresh herbs will make you feel energetic on your MNDAY morning!

(takes 35 minutes & serves 4)


⅓ cup of half-and-half + more for drizzling

3 tbsp unsalted butter

8 eggs

1 pinch of sea salt

1 pinch of ground black pepper

2 tbsp chopped fresh herbs, like chives & parsley


1. heat the oven to 350° F. place a large pyrex in a pan. place the ⅓ cup of half-and-half & butter in the pyrex. place the pan into the oven until the butter is melted, about 5 minutes.

2. remove the pan from the oven & crack the eggs into the pyrex. sprinkle with salt & pepper.

3. fill the pan with warm water & return the pan to the oven. bake until the eggs are just set, about 15 minutes. remove the pan from the oven.

4. drizzle the eggs with half-and-half, sprinkle with fresh herbs, & serve immediately.
