these warm feel-good baked apple donut muffins will make your Saturday morning & 33rd day of COVID-19 breakfasts!

(serves 6 & takes 25 minutes)
ingredients
1¾ cup all-purpose flour
1¼ tsp baking powder
¾ tsp sea salt
2 tsp ground cinnamon
1 cup unsalted butter
1½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 green apples, cored & diced
procedure
1. preheat oven to 350°F. spray muffin pan with nonstick cooking spray. in a medium bowl, mix flour, baking powder, salt, & 1 tsp cinnamon.
2. in another bowl, combine 10 tbsp butter & 1 cup sugar. add eggs & vanilla extract. add flour mixture. in a food processor, purée the diced apples. add puréed apple to batter.
3. pour batter into muffin cups. bake 15 minutes. meanwhile, in a small bowl, whisk the remaining ½ cup sugar & 1 tsp cinnamon. in microwave, melt 6 tbsp butter. brush muffin donuts with melted butter & sprinkle with cinnamon sugar.
