apple-almond-berry cake

thick & fruity, all the qualities this cake is packed with! enjoy this super healthy sugarless & butter-less BFAST on this rainy MNDAY morning!

(serves 6 & takes 1 1/4 hours)

ingredients

1/2 cup olive oil, plus extra for greasing

1 cup plain yogurt

10 tablespoons maple syrup

2 apples, roughly grated

zest of 1 lemon

3 large eggs, separated

1 1/8 cups rolled oats

1 cup ground almonds

1/3 cup all-purpose flour

1 teaspoon baking powder

sea salt

1 1/3 cups frozen berries

procedure

1. preheat oven to 375°F.

2. in a bowl, mix yogurt, honey, apples, & lemon zest.

3. add olive oil & egg yolks.

4. put oats in food processor until you have flour. whisk oats with the almonds, flour, & baking powder.

5. mix dry ingredients into the wet mixture.

6. whisk egg whites with sea salt & fold this into the batter using a spatula.

7. pour batter into greased pan & scatter frozen berries over the top.

8. bake for 45 to 50 minutes, until cake is golden & a skewer inserted into the center of the cake comes out clean.
